Easy Pavlova

Ingredients

  • 2 egg whites
  • 1 1/2 Cups Caster (Superfine) Sugar
  • 1 teaspoon Cornflour (Cornstarch)
  • 1 teaspoon Vanilla
  • 1 teaspoon Vinegar
  • 1/3 Cup Boiling Water
  • Whipped Cream
  • Assorted fruits, e.g. strawberries, peach slices, kiwi fruit, passionfruit, banana

Method

  1. Line baking sheet with foil or non stick baking paper – spray with non-stick spray and dust with cornflour (cornstarch)
  2. Preheat oven to 180°C (350°F)
  3. Beat egg whites until stiff.
  4. Add sugar, 1 Tablespoon at a time until incorporated
  5. Mix Cornflour, Vanilla, Vinegar and Boiling water to a smooth paste
  6. Add to egg whites and beat until stiff and glossy. (approx 15 minutes)
  7. Bake for 20 minutes.  Reduce heat to low and bake for another 20 minutes.  Turn off oven and allow to cool inside oven.
  8. When cold, decorate with whipped cream and top with fruit.
