Tiramisu
 
															
									Description:     Italian for ‘pick me up’ Tiramisu is a surprising light, but rich creamy dessert. It is made from savoiardi biscuits, espresso, and mascarpone, with a drop of marsala for a little kick.

				Ingredients
- 3 large eggs, separated
- 1 cup sugar
- 2 cups mascarpone
- 3 Tbsp sweet Marsala wine
- 1/2 cup grated dark chocolate (or 1/4 cup cocoa powder)
- 18-24 lady finger biscuits (Savoiardi)
- 2 cups freshly made strong black coffee, cooled to room temperature
Method
- Beat the egg whites in a clean bowl (not plastic) and whisk (or beat with electric mixer) until stiff peaks form.
- In a separate bowl, using the same whisk or beaters, combine the egg yolks and sugar until pale.
- Add marsala.
- Fold in the egg whites.
- Quickly dip each ladyfinger into the coffee and place it in the bottom of a rectangular dish. Finish the layer of biscuits in the same way.
- Spread half of the mascarpone mixture over the biscuits.
- Lightly dust the cocoa powder over the mascarpone mixture.
- Repeat with a second layer of coffee-dipped biscuits, mascarpone mixture, and dust the top with the cocoa powder.
- Chill in the refrigerator for at least 3 hours, but preferable overnight.
