Ellen’s Meatballs

Description: I always thought that Ellen made the BEST meatballs. She usually brought them to the reunions.

Serving size: 2 meatballs

Ingredients

  • 2 pounds of Ground Beef
  • 1 small onion (chopped)
  • 2 eggs
  • 2 cloves of garlic (Crushed)
  • 1 cup oatmeal
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried parsley
  • 1/4 cup grated parmesan cheese

Method

  1. Combine all ingredients into a bowl
  2. Form into 24 ball
  3.  Brown them in a frying pan in some oil (optional)
  4. Place them into a saucepan of your favourite red pasta sauce and bring to a boil.
  5. Reduce heat to simmer, stirring frequently to prevent sauce and meatballs from sticking.
  6. Cook for 1 hour or more.
  7. Serve with spaghetti, rigatoni, or any pasta. Great for sandwiches or subs the next day.
